- Preheat oven to broil at 400°F.
- Wash and slice the zucchini.
- In a frying pan, fry the zucchini and peas over high heat, stirring regularly. Cook for 8 to 10 minutes, then add salt and pepper at the end of the cooking time. Set aside.
- In an ovenproof dish, arrange the thick slice of salmon, add a tbsp of Boursin® Cuisine on top. Cook the salmon for 5 minutes under the grill.
- Finally, arrange the salmon on the plate, along with the zucchini and peas. Add a slice of lemon and some chopped parsley.
Vegetarian option: Swap out the salmon with a mix of veggies.
