- Bring vegetable broth to a boil in a saucepan.
- Reduce heat to low and add all ingredients except the salmon, rice, and basil. Simmer for 15 minutes.
- Incorporate the salmon. Bring back to a boil, and then turn of the heat. Set aside a few minutes until salmon is cooked to desired doneness.
- Serve salmon curry with jasmine rice, and garnish with Thai basil.
Aide-gourmet tip: For an equally tasty vegetarian version, replace the salmon with tofu.
