Directions

  1. Preheat oven to 190°C (375°F).
  2. Melt the butter in a large, non-stick skillet over medium heat. Fry the chicken strips for about 3 minutes or until nicely browned. Set aside.
  3. Heat 1 tbsp. (15 mL) of the oil in a large skillet set over medium-high heat; sauté onion and garlic for 1 minute. Add rapini, spinach, reserved chicken, and chicken broth; bring to a boil.
  4. Toss pasta with the sauce, half of each the goat and mozzarella cheeses, and all the basil. Season to taste with salt and pepper.
  5. Transfer to an 2 L (11 X 7-inch) baking dish; sprinkle with remaining cheese. Bake for 25 minutes or until bubbly. Drizzle with remaining oil.
