- Preheat oven to 200 °C (400 °F). Place rack in centre of oven. Line a baking sheet with parchment paper (or use a reusable baking mat).
- Use a serrated knife to cut the tops off of each bun, removing about 0.5 cm (¼ in.). Using your hands, remove bread from inside each bun, taking care not to break through the crust (see Note).
- Place buns on the baking sheet.
- Chop spinach and peppers. Grate cheese.
- Divide half the cheese evenly into bun bottoms. Add spinach, peppers and remaining cheese.
- Crack an egg into each bun.
- Bake for 10 to 25 minutes or until egg white is cooked but yolk is still runny.
- Serve with a green salad.
This recipe is best prepared at the last minute.
NOTE
Instead of discarding the inside and tops of the Kaiser rolls, tear them into pieces and bake them along with your bread bowls. Then you’ll have toasted bread to make your own breadcrumbs.
