Shrimp Salad

1. 14 oz (400 g) frozen Nordic shrimp, thawed and drained
2. 3 tbsp (45 ml) mayonnaise
3. 2 tbsp (30 ml) lemon juice
4. ¼ tsp (1 ml) sambal oelek (or to taste, optional)
5. Salt and pepper, to taste

Corn Salad

1. 2 cups (280 g) frozen corn, thawed
2. 2 stalks celery, diced
3. 1 red bell pepper, seeded and diced
4. 1 green onion, thinly sliced
5. 1 tbsp (15 ml) lemon juice
6. 1 tbsp (15 ml) olive oil
7. ¼ cup (11 g) chopped fresh basil (or cilantro)
8. 4 cups (100 g) arugula
9. Salt and pepper
