- Place the cheese rounds in a sealable jar that holds about 750 mL (3 cups). Add the sprig of tarragon, chopped garlic, capers,
- red peppers and hot pepper flakes. Cover the ingredients with olive oil. Seal the jar and place in the fridge.
- Allow cheese to marinate for 24 hours before serving.
- Use marinated cheese to top a green salad or serve on a platter of antipasti, with crusty bread.
Aide-gourmet tip: Marinated goat cheese should not be stored at room temperature. It will keep for one week in the fridge.
Don't be surprised to see that the olive oil has congealed in the fridge. Place the marinated cheese at room temperature 20 minutes before serving and the oil will become liquid and clear again.
