Certain flavours are closely associated with cocktails such as juniper berry, a key component of gin and the star ingredient of this Harrington sparkling water. Cranberries add a festive touch to this non-alcoholic take on a gin fizz.
- In a cocktail shaker, vigorously mix the ice cubes, lime juice, cranberry juice, cane syrup and egg white for 15 seconds.
- Strain into a highball glass. Add more ice cubes, to taste. Top off with the sparkling water. Decorate with the lime zest and frozen cranberries.
Chef’s tip
To make your own simple syrup, in a small pot, combine 1 cup (210 g) sugar and 1 cup (250 ml) water. Bring to a boil over medium heat. Remove from the heat and let cool completely.
The egg white can be replaced with 1 tsp (5 ml) vegan emulsifier.
