1. In a small saucepan over medium heat, bring a small amount of hot water to a gentle simmer.
2. Add the cream, honey, coffee cream liqueur (if using) and cardamom and heat at medium, stirring, until steaming. Remove pan from heat and stir in the chocolate until smooth.
3. Transfer mixture to a fondue pot and carefully place on the fondue burner.
