Here’s our basic recipe
Healthy and balanced, this basic muffin recipe can easily be adapted to your cravings and whatever is inside your pantry.
4 tIPs FOR A PERFECT MUFFIN
- 1) Always mix your dry ingredients and wet ingredients separately before combining them together.
- 2) For soft muffins, it’s best to just moisten the mixture. Gently stir the mixture until just moist. Do not overmix.
- 3) Fill the moulds ¾ of the way.
- 4) If you’re using frozen fruit, don’t thaw them first. Put them in at the very last minute to avoid staining the dough.
BREAKFAST MUFFINS
In the morning, heat your muffins up a few seconds and serve them with jam, homemade applesauce, or a little butter. Perfect with a cup of coffee or tea!
- More fibre? To your basic recipe, add between 30 mL (2 tbsp.) and 60 mL (1/4 cup) of bran, wheat germ, or ground flax seeds.
- More energy? Blend some iron-fortified baby cereal into the mixture.
SNACKTIME MUFFINS
A little hungry? Muffins are great and versatile. Starting with the basic recipe:
- Create duos: You can incorporate ripe bananas and nuts, grated zucchini and chocolate, or small fresh fruit and canned peaches.
- A mixture of dried fruit, such as raisins, cranberries, abricots, and so on, make for a great muffin.
- Use frozen fruit for a summer taste all year long.
CAKE-LIKE MUFFINS
More refined, muffins become a special attention… and can even hold a few candles!
- Once the dough has been poured into the muffin tins, sprinkle a gourmet topping for a dessert feel. A crumble of maple sugar, pecans, and butter, for example, would be a scrumptious addition to your maple muffins!
- Channel your inner decorator: top your muffins with cream cheese frosting—all colours, shapes, and flavours are allowed!
SAVOURY MUFFINS
For a light lunch, a warm muffin is the perfect side to a hot or cold soup, salad, or crudités.
Step 1: Leave the brown sugar and vanilla out of the basic recipe.
Step 2: Add a pinch of oregano or herbes de Provence to the dry ingredients. Once all dry and wet ingredients have been combined, add small amounts of whatever you like: shredded cheese, ham cubes, green onions, sundried tomatoes, peppers, olives, etc.
