6 perfect side dishes to serve with lobster

Mother’s Day coincides with lobster season, so we’re excited to have the crustacean as part of the celebration. The crustacean with the delicate flesh deserves only the best side dishes. The following six recipes will delight everyone at the table, starting with mom.

1. Flavoured butters

Melted butter served as a dipping sauce is a simple and timeless way to enjoy lobster meat. To elevate its flavour, try a variety of aromatics like ginger and maple syrup, or sundried tomatoes and cilantro. Lobster can also be served with a trio of butters by adding butter melted in a mixture of chicken broth and lemon juice, and then flavoured with dill.

2. Radicchio salad

A salad that highlights radicchio’s bitterness is ideal for neutralizing one’s palate and avoiding lingering flavours in your mouth so you can taste more of the lobster meat. This colourful salad combines the sweetness of cherry tomatoes, the crunchiness of the slaw and yellow and green bell peppers with a honey and Dijon mustard-flavoured vinaigrette. It’s an excellent way to bring a touch of freshness to a plate of grilled lobster.

3. Grapefruit, asparagus and radish salad

Asparagus, radishes, zucchini and fennel: this fresh and crunchy combination is welcome in a meal that’s dominated by creamy butter and the flavour of lobster. To these thinly sliced vegetables, add grapefruit segments and then drizzle everything with a vinaigrette. Let the salad marinate in the refrigerator for 30 minutes before transferring it to a serving dish.

4. Green beans with sundried tomatoes and almonds

This warm green bean salad, aside from being easy to make, brings an interesting texture contrast with the lobster. Plunge the vegetables into boiling water for two minutes, which helps to retain their crunchiness as well as their vibrant green colour. Add oil and chopped sundried tomatoes before transferring the salad to a serving bowl, and then garnish with sliced almonds.

5. Grilled asparagus brochettes

Alongside lobster, grilled veggies always make a great pairing. Carrots, cauliflower, fennel, onion: you can make a variety of combinations or simply opt for a seasonal vegetable like asparagus. In this recipe, assemble the asparagus spears (six at a time) on two skewers to make handling on the grill easy. Brush the asparagus with a little oil and a sprinkle of salt before placing them on the grill.

6. Roasted “accordion” potatoes

Potatoes, whether served in a salad or whole, with their creamy flesh, complement lobster perfectly. Elevate your presentation by slicing and arranging them vertically in a baking dish. Brush with oil before roasting them in the oven, for potatoes that are tender on the inside and crispy on the outside.

What to do with the shells

You can freeze the shells for later use in a lobster bisque recipe. This velvety preparation, which can be enjoyed as is or serve as a base for a creamy risotto, can be paired with lobster meat or the meat of any other crustacean.
