6 Fall Vegetables to Cook on the Grill

The nights may be getting shorter and cooler, but for many it’s still grilling season. Prolong the joy until the very end with one last barbecue that showcases delicious autumn veggies, including corn, potatoes, tomatoes and onions.

1. Corn: Grilled Corn on the Cob (Elotes a La Parrilla)

Even if you love boiled corn with salt and butter, grilling cobs has the advantage of caramelizing the kernels’ sugars and enhancing the vegetable’s flavour. Serve it in a salad, or add a creamy topping spiced with garlic, chili powder and cilantro, inspired by the popular Mexican street food.
