- Combine all sauce ingredients and set aside. Wash bean sprouts under cold water. Drain and set aside in a bowl. In the meantime, finely julienne melon and green onions and place in bowls.
- Also place mint leaves and shrimp in bowls. Soak a rice sheet in boiling water for about 10 seconds and spread on a damp cloth.
- Place two shrimp, a few melon and green onion strips, two to three mint leaves and some bean sprouts in the middle. Fold sheet in half over stuffing, fold in sides and roll firmly but gently.
- Repeat for remaining rolls. Serve rolls cut in half with a small ramekin of sauce and garnish plates with remaining melon strips.
Variation : Replace bean sprouts with rice noodles.
