- Preheat oven broiler. Cut each slice of bread into quarters to make 12 triangles in all.
- Place on a baking sheet and broil for 2 to 3 minutes, or until lightly toasted.
- Allow to cool. Spread ostrich terrine generously onto each toast triangle. Spoon 2 mL (1/2 tsp.) orange marmalade onto the centre of each triangle.
- Garnish with two thin slices of kumquat and a small sprig of fresh rosemary.
Variation: Replace orange marmalade by onion confit and garnish toast with finely diced fresh mango. Sprinkle with fresh thyme.
