Directions

  1. Cook pasta al dente in a large pot of salted boiling water. Drain and set aside.
  2. Meanwhile, heat butter and oil in a large skillet and sauté mushrooms with garlic for about 5 minutes or until mushrooms are browned.
  3.  Add hot pepper flakes and parsley and continue cooking over low heat for 2 minutes.
  4. Add lemon juice, mascarpone and season to taste. Fold in pasta.
  5. Top with Parmesan and serve.
