Directions

  1. Preheat the oven to 180°C (350°F).
  2. Combine graham crumbs and butter in a bowl. Press mixture into the bottom of a 23-cm (9-inch) pie pan. 
  3. Bake in the oven for 7 or 8 minutes, until crust is golden brown and crispy. Set aside at room temperature.
  4. In a large bowl, gently toss berries with icing sugar. Set aside at room temperature. 
  5. Set ice cream at room temperature about 15 minutes, until soft enough to spread easily. Use a spoon to spread ice cream evenly over the pie crust. Place it in the freezer until firm, at least 1 hour.
  6. Top pie with a mountain of fruit and some mint leaves, if using.
