Chef's secret
To vary the taste of quiches, use whole wheat or flavoured tortillas. Add or substitute certain ingredients with sundried tomatoes, grilled bell peppers, blue cheese, spinach, prosciutto, pancetta, toasted pine nuts, etc.
Nutrition tip
Goat cheeses are generally moister and lower in fat than equivalent cow's milk cheeses. Soft, unripened goat cheeses often contain less than 20% fat.
Culinary discovery
Arugula, also called rocket, is a wild lettuce much sought-after for its spicy and slightly nutty flavour. It goes especially well with egg-based dishes (omelettes, quiches, frittatas) and is a great accompaniment to mild cheeses and caramelized fruit.
