- Preheat oven to 200°C (400°F).
- Place 4 tortillas on a baking sheet lined with parchment paper.
- Top with chili and cheese, and cover with four remaining tortillas.
- Bake in the oven for about 10 minutes.
- Cut quesadillas in 4 and garnish with fresh coriander. Serve with plain greek yogurt and lime wedges.
