Ingredients

6 beef medallions

1 bay leaf

15 mL (1 tablespoon) orange juice

10 mL (2 teaspoons) sugar

5 mL (1 teaspoon) Dijon mustard

375 mL (1 ½ cups) beef broth

375 mL (1 ½ cups) red wine

As required: olive oil

45 mL (3 tablespoons) flour

To taste, thyme

To taste, salt

2 garlic cloves
-
1 onion

2 slices of bacon
-
30 g (3 squares) Lindt Excellence 70% cocoa dark chocolate

Directions
- Fry chopped bacon in a saucepan. Add onion, garlic, thyme, salt and pepper.
- Sprinkle on flour (and oil as need be to moisten flour).
- Stir in red wine, broth, mustard, sugar, orange juice and bay leaf, mixing well. Allow to simmer for 10 minutes.
- In the meantime, sear beef medallions in olive oil until desired doneness is reached. Finish cooking in the oven, as need be.
- Remove bay leaf from the sauce and add chocolate, allowing to melt. Stir well to combine.
- Strain sauce. Add cream to sauce and reheat.
- Spoon sauce onto beef medallions and garnish with orange zest and grated chocolate. Serve with a julienne of vegetables.
