Zurigo cheese with stewed ground cherries

Ingredients

  1. 250 mL (1 cup) ground cherries
  2. 60 mL (¼ cup) sugar
  3. 15 small crackers
  4. 300 g Zurigo cheese
  5. To taste, fresh thyme

Directions

  1. Bring ground cherries and sugar to a boil in a saucepan. Simmer over low heat until liquid evaporates and the ground cherries are soft.
  2. Top crackers with a slice of Zurigo cheese, add a spoonful of stewed cherries on top, and garnish with fresh thyme.
  3. Serve immediately.
