Yummy cream of broccoli soup

Ingredients

  1. 2 crowns of broccoli
  2. 15 mL (1 tbsp.) olive oil
  3. 2 onions, diced
  4. 1.25 L (5 cups) Compliments Chicken Broth, 35% Less Sodium
  5. 250 mL (1 cup) Compliments Balance Part Skim Mozzarella Shredded Cheese
  6. To taste, salt and pepper
  7. 30 mL (2 tbsp.) 15% M.F. cooking cream

Directions

  1. Cut the crowns of broccoli into florets. Set aside 125 mL (½ cup) of broccoli florets for decoration.
  2. In a saucepan, sweat the onions in oil without browning, about 3 minutes.
  3. Add the broccoli and chicken broth and simmer for about 15 to 20 minutes.
  4. Add the cheese and continue cooking until completely melted. Salt and pepper to taste.
  5. Blend mixture in a food processor until smooth and creamy.
  6. Blanche the reserved florets. Drain.
  7. Spoon soup into bowls and decorate with a thin stream of cream and reserved broccoli florets.
