Ingredients

375 mL (1½ cups) all purpose flour

250 mL (1 cup) whole wheat flour

10 mL (2 tsp.) baking powder

2 mL (½ tsp.) baking soda

2 mL (½ tsp.) salt

10 mL (2 tsp.) dried oregano

10 mL (2 tsp.) sugar

250 mL (1 cup) plain Greek yogurt

125 mL (½ cup) milk

2 eggs
-
60 mL (¼ cup) canola oil

1 medium zucchini, grated
-
2 green onions, minced
-
175 g (6 oz.) cooked white ham

325 mL (1⅓ cups) grated cheddar cCheese aged 1 or 2 years

Directions
- Preheat oven to 180°C (350°F) and grease a muffin tin.
- In a large bowl, mix together flour, baking powder, baking soda, salt, oregano, and sugar.
- In a small bowl, beat together yogurt, milk, eggs, and oil.
- Add the wet ingredients to the dry ingredients and mix just until combined. Stir in the zucchini, green onions, ham, and 250 mL (1 cup) of cheese.
- Divide mixture equally into muffin cups and bake for 20 minutes. Garnish muffins with remaining grated cheese and continue baking about 5 minutes or until cheese is golden brown. Serve hot with Greek yogurt on the side.
