Warm Grilled Plum and Nectarine Salad

Ingredients

Salad

  1. 5 ml (1 tsp.) olive oil
  2. 3 black plums
  3. 3 nectarines
  4. 1.5 L (6 cups) baby spinach
  5. ½ red onion
  6. 150 g (1/3 lb) crumbled feta cheese

Dressing

  1. 60 ml (¼ cup) olive oil
  2. 45 ml (3 tbsp.) balsamic vinegar
  3. 15 ml (1 tbsp.) honey
  4. ½ lemon, zest and juice
  5. 10 basil leaves
  6. To taste, salt and pepper

Directions

  1. Preheat barbecue to high.
  2. Combine all vinaigrette ingredients and set aside. In a large bowl, coat fruit with olive oil. Place fruit flesh
  3. side down directly on the barbecue, close the cover and grill three to four minutes per side or until grill marks appear.
  4. Before serving, divide spinach onto six small plates. Add red onion and feta and fi nish with fruit pieces. Dress each serving with vinaigrette and top with barbecue-grilled croutons.
