Warm goat cheese and fig pinwheel

Ingredients

  1. 2 springs of fresh thyme, leaves removed
  2. 30 to 45 ml (2 to 3 tbsp.) coarsely ground hazelnuts
  3. 5 ml (1 tsp.) maple syrup
  4. 175 g, L’Enchanteur goat’s milk cheese, cut vertically (from top to bottom) into 5 slices
  5. 2–3 fresh figs, cut into 10 slices ½ cm thick

Directions

  1. Preheat the barbecue to 230°C (450°F) within.
  2. Create a pinwheel shape on a square piece of foil or in a heatproof ramekin, alternating 2 fig slices with one cheese slice.
  3. Pour maple syrup over the pinwheel.
  4. Sprinkle hazelnuts and thyme leaves over the pinwheel.
  5. Seal foil, creating a papillote.
  6. Place the papillote or ramekin on the upper barbecue grill and heat about 3 minutes or until the cheese begins to soften.
  7. Serve with croutons.
