Ingredients

1 package arugula (150 g)

125 mL (1/2 cup) walnuts, chopped

2 mL (1/2 tsp.) salt

1 mL (1/4 tsp.) pepper

175 mL (3/4 cup) olive oil

125 mL (1/2 cup) fresh Parmigiano Reggiano, grated

Directions
- In a food processor, blend arugula, walnuts, salt, and pepper until finely chopped.
- Pour a fine stream of oil into the processor while it is on and mix until pesto is smooth, scraping down the sides of the container as needed.
- Add Parmigiano Reggiano and mix again.
- Serve with pasta, fish, or over toasted bread or grilled vegetables.
