Veggie burgers from Christian Bégin

Ingredients

  1. 4 Yukon Gold potatoes, unpeeled and grated
  2. 1 yellow onion, finely chopped
  3. 15 mL (1 tbsp.) ground chia seeds
  4. 125 mL (1/2 cup) oat flakes
  5. 15 mL (1 tbsp.) nutritional yeast flakes
  6. 45 mL (3 tbsp.) sunflower seeds
  7. 15 mL (1 tbsp.) Mexican chili seasoning
  8. 15 mL (1 tbsp.) HP sauce
  9. 175 mL (3/4 cup) canned beans of your choice, puréed
  10. To taste, salt and pepper
  11. To taste, fresh cilantro, chopped
  12. Enough vegetable oil for cooking

Directions

  1. Wrap potatoes and onions in a clean dishtowel and press firmly to absorb as much liquid as possible. Set aside.
  2. Mix chia seeds with 45 mL (3 tbsp.) water in a small bowl and let jellify.
  3. Put oat flakes, yeast, sunflower seeds, chili seasoning, HP sauce, and jellified chia seeds in a food processor. Mix until you have a lumpy batter.
  4. In a bowl, add potatoes, onion, puréed beans, and oat flake batter, and stir well until mixture is smooth. Add salt and pepper to taste.
  5. Press mixture into an appropriately-sized cookie cutter to make patties.
  6. In a non-stick skillet, heat oil over medium-high heat and cook patties 5 minutes per side, or cook patties on aluminum foil on the BBQ over medium heat, 8 minutes per side.
