Veal cutlets with prosciutto

Ingredients

  1. 30 mL (2 tbsp.) olive oil
  2. 4 Quebec Milk-Fed Veal cutlets, about 120 g (¼ lb.) each
  3. 16 slices of prosciutto
  4. 500 mL (2 cups) tomato sauce (homemade or commercial)
  5. 250 mL (1 cup) shredded mozzarella
  6. 60 mL (¼ cup) grated Parmesan cheese
  7. 8 to 10 fresh basil leaves, chopped
  8. To taste, salt and pepper

Directions

  1. Preheat oven broiler.
  2. Heat oil in a skillet over medium-high heat. Sear veal cutlets on each side. Transfer to a baking dish.
  3. Equally divide the prosciutto onto the cutlets. Top with tomato sauce. Add the mozzarella and Parmesan cheese.
  4. Broil for 2 to 3 minutes, or until cheese is melted and lightly grilled. 
  5. Right before serving, sprinkle with chopped fresh basil and season to taste.
  6. Serve with pasta and your choice of green vegetable.
