Veal Cutlets with Goat Cheese and Apples

Ingredients

  1. 30 mL (2 tbsp.) honey
  2. 15 mL (1 tbsp.) olive oil
  3. 2 apples, peeled and thinly sliced
  4. ½ red onion, minced
  5. 4 milk-fed veal cutlets
  6. 2.5 ml (½ tsp.) ground cardamom
  7. 2.5 mL (½ tsp.) peppercorns
  8. 125 g L'Enchanteur goat cheese
  9. 30 mL (2 tbsp.) unsweetened applesauce
  10. 30 mL (2 tbsp.) apple cider vinegar
  11. 30 mL (2 tbsp.) flour

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Mix together the goat cheese, pepper, and ground cardamom. Use a rolling pin or a small tenderizing mallet to pound cutlets to same thickness. Stuff the cutlets with the goat cheese mixture and tie tightly with string.
  3. Heat the oil in a skillet over medium-high heat. Fry the onions for 1 to 2 minutes. Add the apples, honey, applesauce, and apple cider vinegar and cook for about five minutes.
  4. Lightly coat cutlets with flour. In the same skillet, brown cutlets about 1 minute on each side. Transfer cutlets and onion mixture to a baking dish. Cover with foil and bake 10 to 12 minutes.
  5. Serve with a white and wild rice mixture and snow peas.
