Veal Cutlets with Apples and Marsala Sauce

Ingredients

  1. 30 mL (2 tablespoons) Calvados or brandy (optional)
  2. 1 red Cortland apple, cored and cut into strips
  3. 15 mL (1 tablespoon) butter
  4. 60 mL (1/4 cup) all-purpose flour
  5. 4 veal cutlets (170 g each)
  6. 15 mL (1 tablespoon) Compliments Authentico olive oil
  7. 125 mL (1/2 cup) white wine
  8. 60 ml (1/4 cup) of beef broth
  9. To taste, salt and pepper
  10. 60 ml (1/4 cup) of 35% cream

Directions

  1. Heat the oil in a frying pan. Lightly coat the cutlets in flour and brown for 3 to 4 minutes on each side.
  2. Remove from the pan and set aside. Drain the excess oil from the pan and melt the butter.
  3. Add the apple strips and brown for 2 to 3 minutes. Deglaze the pan with the white wine and add the Calvados or brandy. Reduce by half.
  4. Thoroughly incorporate the beef broth and the cream. Return the veal cutlets to the pan and cook for 1 minute.
  5. Season with salt and pepper, to taste.
  6. Serve with green beans and baby potatoes.
