Ingredients
Vinaigrette

45 mL (3 tbsp.) Compliments olive oil

30 mL (2 tbsp.) lime juice

10 mL (2 tsp.) Compliments Honey

10 mL (2 tsp.) Sensations by Compliments Whole Grain Dijon Prepared Mustard

60 mL (¼ cup) fresh Compliments Seafood Herb Mix, finely chopped

1 garlic clove, finely chopped

To taste, salt and pepper

1.5 L (6 cups) Fresh Attitude San Marino Mix mesclun, lightly packed

20 cherry tomatoes, halved
-
4 Lebanese cucumbers cut into half-rounds

60 mL (¼ cup) homemade or store-bought croutons
-
200 g (7 oz.) cooked salmon
-
1 package (140 g) smoked salmon, cut into strips

1 lime, cut into wedges

Directions
- Mix together the olive oil, lime juice, honey, mustard, herbs, and garlic in a small bowl. Season with salt and pepper to taste. Set aside.
- Mix the mesclun, tomatoes, cucumbers, and croutons together in a large bowl. Add reserved vinaigrette and toss to coat well.
- Add the cooked salmon and smoked salmon. Toss gently.
- Serve onto four plates and garnish with a lime wedge.
Variation:
- For stronger flavour, add some capers.
- If you really like fresh herbs, don't hesitate to add some Compliments Seafood Herb Mix to the salad. Just chop it coarsely and combine with the salad greens.
Tip:
- Next time you prepare your favourite salmon recipe, cook an extra fillet. That way you'll have leftovers to use the next day in this delicious salad!
- If you don't find Compliments Seafood Herb Mix, you can use equal parts chives, dill, and tarragon in its place.
