Ingredients

750 ml (3 cups) short pasta (fusilli or penne)
142g (1 pack) of baby spinach
540 mL (1 can) Compliments Six Bean Blend, drained and rinsed
80 mL (⅓ cup) traditional pesto
60 mL (¼ cup) sundried tomatoes, rehydrated and thinly sliced
5 mL (1 tsp.) lemon zest
15 mL (1 tbsp.) lemon juice
1 mL (¼ tsp.) hot pepper flakes (optional)
125 mL (½ cup) Italian-style shredded cheese blend

Directions

Cook pasta according to package directions. Toss hot pasta with spinach, beans, pesto, sundried tomatoes, lemon zest, lemon juice, and hot pepper flakes. Transfer to a serving dish and sprinkle with shredded cheese blend. Serve immediately.
