Ingredients

10 mL (2 teaspoons) dried thyme

250 mL (1 cup) cranberry sauce

250 mL (1 cup) pecans, chopped

60 mL (1/4 cup) bread crumbs

2 onions, chopped

30 mL (2 tablespoons) olive oil

1 turkey (3.2 kg/7 lb)

1 orange's zest and juice

To taste, salt and pepper

Directions
- Preheat the oven to 190˚C (375˚F).
- Empty the cavity of the turkey and blot with a paper towel. Set the turkey aside.
- Heat the oil and sauté the onions in a frying pan for 3 minutes. Add the bread crumbs, pecans, cranberry sauce, thyme, orange zest and orange juice. Add salt and pepper, and combine thoroughly. Stuff the turkey with the mixture.
- Place the turkey in a large roasting pan. Cover with aluminum foil and roast for approximately 2 1/2 hours, basting often with the pan juices. Remove the foil for the last 30 minutes. Garnish with orange slices and pecans.
- Serve with mashed potatoes and carrots.
