Turkey quesadillas with cranberry sauce

Ingredients

  1. 2 cups (500 mL) cooked turkey, chopped
  2. 1 red pepper
  3. ½ small red onion
  4. 1 can 7 oz (199 mL) whole kernel corn, drained
  5. 5 mushrooms
  6. 1 pkg. (35 g) Compliments Fajita Seasoning Mix
  7. 8 Flour Tortillas
  8. 1 ½ cups (375 mL) Compliments Finely Shredded Tex-Mex Cheese Blend
  9. ¼ cup (60 mL) Compliments Extra Virgin olive oil (approx.)
  10. Compliments Festive Cranberry Sauce

Directions

  1. Preheat oven to 375oF (190oC). Toss turkey with red pepper, onion, corn, mushrooms and seasoning mix in a bowl.
  2. Sprinkle one side of each tortilla with equal amounts of half the cheese and the full turkey mixture. Sprinkle remaining cheese on top; fold tortillas in half.
  3. Heat 1 tbsp (15 mL) of the oil in a large non-stick skillet set over medium heat. Cook quesadillas in batches for 1 minute per side or until golden, adding more oil to skillet if necessary.
  4. Transfer to a parchment paper-lined baking sheet and bake for 10 minutes or until heated through and crisp. Serve with cranberry sauce.
