Turkey Paella

Ingredients

  1. 1 tbsp (15 mL) Compliments Extra Virgin olive oil
  2. 1 cup (250 mL) thinly sliced chorizo sausage
  3. 1 small sweet onion, diced
  4. 2 cloves garlic
  5. 2 ½ cups (625 mL) Compliments Fat Free Chicken Broth
  6. 1 cup (250 mL) Compliments Basmati Rice
  7. ½ tsp (2 mL) saffron or 1 tsp (5 mL) turmeric
  8. 1 pkg. (340 g) shrimps
  9. 2 cups (500 mL) shredded turkey
  10. ½ cup (125 mL) frozen peas
  11. ½ bunch fresh parsley
  12. To taste, salt and pepper

Directions

  1. Heat oil in a Dutch oven set over medium heat; sauté the sausage for 4 to 5 minutes or until golden.
  2. Add the onion and garlic; cook for about 3 minutes or until softened slightly.
  3. Stir in the chicken broth, rice and saffron; cover. Simmer, stirring occasionally, for 10 minutes or until most of the liquid has absorbed.
  4. Stir in the shrimp, turkey and peas; cook for 5 minutes or until heated through.
  5. Stir in the parsley; season to taste with salt and pepper.
