15 mL (1 tbsp.) 15% M.F. cream

30 mL (2 tbsp.) flaked light tuna in water

15 mL (1 tbsp.) tomato, diced

15 mL (1 tbsp.) lemon zest (about 1 lemon)

10 mL (2 tsp.) snipped chives

To taste salt and freshly ground pepper

Directions
- Whisk together the egg, flour, oil, cream, and baking powder in the mug.
- Add the tomato, lemon zest, chives, salt, and pepper. Mix together.
- Bake in microwave on high for 1 minute and 20 seconds.
