Ingredients

½ package (150 g/5 oz.) Tortellini (meat or cheese)

4 field tomatoes, diced

1 garlic clove, crushed

8 basil leaves, minced

30 mL (2 tbsp.) olive oil

To taste, fleur de sel and freshly ground pepper

To taste, arugula microgreens

1 container (50 g/1.8 oz.) balsamic vinegar pearls

Directions
- Cook tortellini according to package instructions.
- Make a salsa by mixing together tomatoes, garlic, basil, and olive oil. Season with salt and pepper to taste.
- Assemble the individual bites in appetizer spoons. Start with a bed of tomato salsa topped with one tortellini, drizzle with olive oil, and garnish with a few microgreens and 2 to 5 mL (½ to 1 tsp.) of balsamic vinegar pearls. Repeat and serve.
