Tomato Mozzarella Stacks

Ingredients

  1. 4 Compliments Tom-blaka™ Tomatoes
  2. 2 balls buffalo mozzarella (125 g each)
  3. 60 ml (¼ cup) extra virgin olive oil
  4. 60 ml (¼ cup) balsamic vinegar
  5. 12 fresh basil leaves (approximately)
  6. To taste, salt and pepper

Directions

  1. Cut 1 cm (½ in.) off top and bottom of each tomato and discard. Cut each tomato into three slices and set aside. Cut each mozzarella ball into four slices and set aside.
  2. Thoroughly combine olive oil and balsamic vinegar and set aside. In the following order, layer one tomato slice, one mozzarella slice and one or two basil leaves. Repeat and top with a tomato slice.
  3. Repeat procedure for three remaining tomatoes. Pour one-quarter of oil mixture (30 ml/2 tbsp.) over each stack. Salt and pepper to taste.
