Thai blue marlin steaks

Ingredients

  1. 15 mL (1 tbsp.) olive oil
  2. 1 red onion, minced
  3. 2 red bell peppers, thinly sliced
  4. 4 stalks celery, cut diagonally
  5. 4 150 g blue marlin steaks
  6. 350 mL Sensations by Compliments Thai Yellow Curry Cooking Sauce
  7. To taste, Minced fresh coriander,
  8. To taste, salt and pepper

Directions

  1. Preheat the oven to 220°C (425°F).
  2. Heat the oil in a wok or large skillet and sauté vegetables for 2 to 3 minutes.
  3. Place vegetables in an oven-proof dish.
  4. Add the blue marlin steaks and cover with cooking sauce. Sprinkle with coriander and season to taste.
  5. Cook 12 to 15 minutes or until fish is opaque and flakes easily with a fork.
  6. Serve with rice vermicelli.
