Ingredients

1 container (398 mL) coconut milk

60 mL (1/4 cup) yellow curry paste

600 g (1 1/3⅓ lb.) mahi-mahi fillets

1 bunch fresh Compliments Cilantro

10 mL (2 tsp.) oil

1 onion, cut into thin strips

1 red pepper, cut into thin strips

1 small celeriac, cut into matchsticks

To taste, crushed cashew nuts

Directions
- Whisk coconut milk and curry paste together in a saucepan. Bring to a boil over medium heat. Add mahi-mahi fillets and coriander. Poach 7 minutes, turning fillets at the midway point.
- In the meantime, heat the oil in a skillet over high heat and sauté the onion, red pepper, and celeriac.
- Serve the vegetables, fillets, and sauce over a bed of brown rice. Garnish with cashews to taste.
