Ingredients
Pork fajitas

2 sweet red peppers, seeded and quartered

2 red onions, cut into thick slices

15 mL (1 tbsp.) Sensations by Compliments, Extra Virgin 100% Olive Oil

5 mL (1 tsp.) chili powder
-
5 mL (1 tsp.) ground cumin
-
1 mL (¼ tsp.) salt
-
1 pork tenderloin, about 1 lb. (450 g)
-
80 mL (⅓ cup) BBQ Sauce
-
8 Compliments Balance Multigrain with Flax Tortillas
Toppings of choice

Sour cream or Greek yogurt
-
Lime wedges
-
Tomatoes, diced
-
Fresh cilantro leaves

Diced avocado or guacamole

Store-bought salsa

Directions

Preheat barbecue to medium-high. Oil the grill.

Place peppers and onions in a bowl. Add oil, spices, and salt. Mix to coat vegetables well.

Brush pork all over with barbecue sauce.

Grill pork tenderloin for 20 to 25 minutes, turning and brushing with remaining barbecue sauce several times while cooking.

Grill vegetables for about 8 to 10 minutes or until tender and lightly grilled.

Remove vegetables from heat and cut pepper into strips. Remove pork from heat, tent with aluminum foil, and let stand for about 5 minutes before slicing.

Heat tortillas on grill for about 30 seconds per side.

Serve with your chosen toppings.
