Soft Tacos with Ground Beef

Ingredients

  1. 15 mL (1 tbsp.) canola oil
  2. 455 g (1 lb) lean ground beef or pork
  3. 478 g (1 box) soft taco kit
  4. To taste, mild salsa
  5. 375 mL (1 1/2 cups) shredded Tex-Mex cheese
  6. 18 cherry tomatoes, halved
  7. 4-6 lettuce leaves, finely chopped

Directions

  1. In a large skillet set over high heat, heat oil and cook ground beef until no longer pink.

  2. Add taco kit spice mix and 175 mL (¾ cup) of water. Stir frequently and continue cooking until mixture thickens.

  3. Heat tortillas according to package directions.

  4. Fill soft tacos with meat, salsa, cheese, cherry tomatoes and lettuce. Wrap and serve immediately.
