Ingredients
pop-scallop tartare

2 scallop cube tubes for tartare, drained

30 mL (2 tbsp.) Sushi à la maison Spicy Mayo

1 green onion, finely chopped

4 radishes, finely julienned

10 croutons

To taste, buttered popcorn
classic beef tartare

2 beef cube tubes for tartare
-
1 egg yolk
-
15 mL (1 tbsp.) finely chopped shallot

15 mL (1 tbsp.) chopped capers, rinsed and drained

15 mL (1 tbsp.) Dijon mustard
-
2 pickles, finely chopped
-
5 mL (1 tsp.) Worcestershire sauce

To taste, ketchup
-
To taste, olive oil

To taste, tabasco-style sauce

To taste, fleur de sel and ground pepper

Directions
- In a bowl placed over ice, combine all ingredients for the scallop tartare except the popcorn. Set aside in fridge for 30 minutes.
- In another bowl placed over ice, combine all beef tartare ingredients.
- Serve tartare duo with or on crusty bread. Top scallop tartare with popcorn just before serving.
