Ingredients

1 Origine Breizh baguette, halved lengthwise

250 mL (1 cup) ricotta cheese

30 mL (2 tbsp.) balsamic vinegar syrup or reduction

2 red tomatoes, sliced

2 Kumato tomatoes, sliced

2 yellow tomatoes, sliced

10 fresh basil leaves

¼ red onion, cut into thin strips

To taste, salt and pepper

Directions
- Spread the ricotta cheese over half the baguette and drizzle with the balsamic coulis or reduction.
- Cover with the red, Kumato, and yellow tomato slices, alternating colours. Add the fresh basil, onion, and then season with salt, and pepper. Close the sandwich, share, and enjoy!
Variations
- Scandinavian-style: cream cheese, smoked salmon, capers, thinly sliced red onion, fresh dill, and arugula microgreens.
- Mediterranean-style: hummus, feta cheese, and grilled vegetables (zucchini, sweet peppers, onions, and eggplant).
- French-style: Smoked old-fashioned Black Forest smoked ham, Swiss cheese, tomato, arugula, and pesto.
- Québec-style: Moishes sliced roast beef, Dijon mustard, caramelized onions, sliced Oka cheese, and mâche.
Tips
Be sure to keep the sandwich cool while transporting it. Leave it whole for your potlucks and cut only when ready to share.
