- Whisk together the orange juice, honey, and vinegar in a large bowl until well blended.
- Add strawberries, mix gently, and set aside to marinate, about 30 minutes.
- Fan out strawberry slices on a plate and drizzle with remaining vinaigrette.
- Garnish with orange zest strips and mint. Put plate in the centre of the table so people cans serve themselves.
Champagne vinegar is aged in white oak barrels, which removes its bubbles while enhancing its bright aromas and flavour. It ’s delicious on summer salads made with blood oranges, or in vinaigrette with sea salt and pepper added.
