Strawberry-grapefruit salad with Vacherin DuVillage cheese

Ingredients

Vinaigrette

125 mL (1/2 cup) canola oil
45 mL (3 tbsp.) raspberry vinegar
1 lemon, juice and zest
45 mL (3 tbsp.) honey
30 mL (2 tbsp.) finely snipped fresh basil
To taste, salt and freshly ground pepper

Salad

1 L (4 cups) packed mesclun
2 green onions, minced
125 mL (1/2 cup) strawberries, quartered
1 small grapefruit, cut in segments
1 avocado, cubed
250 mL (1 cup) cubed Vacherin DuVillage cheese
125 mL (1/2 cup) sliced almonds, toasted
To taste, salt and freshly ground pepper

Directions

Whisk together all vinaigrette ingredients in a bowl and reserve in fridge.
Mix all salad ingredients in a salad bowl.
Gently toss with vinaigrette.

*Chef’s tip: You can top the salad with strips of grilled chicken to make a main course.
