Strawberry-filled oatmeal muffins

Ingredients

  1. 375 mL (1½ cups) quick-cooking rolled oats
  2. 375 mL (1½ cups) whole wheat flour
  3. 7 mL (1½ tsp.) baking powder
  4. 7 mL (1½ tsp.) baking soda
  5. 1 mL (¼ tsp.) salt
  6. 175 mL (¾ cup) brown sugar
  7. 375 mL (1½ cups) apple sauce
  8. 2 eggs
  9. 75 mL (⅓ cup) canola oil
  10. 5 mL (1 tsp.) vanilla extract
  11. 60 mL (¼ cup) strawberry jam

Directions

  1. Place rack in the middle of the oven. Preheat oven to 180°C (350°F). Fill 12 muffin tins with paper liners. 
  2. Mix together the rolled oats, flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Beat brown sugar together with wet ingredients excluding the jam in a blender. 
  4. Integrate dry ingredients into wet ingredients until mixture is smooth. 
  5. Pour a little batter into bottom of muffin tins, top with about 5 mL (1 tsp.) jam, and then cover with remaining batter. 
  6. Bake for 20 minutes and let cool.

Vary the muffins by using different jam fillings. These muffins keep well in the fridge.
