Stawberry tail jelly

Ingredients

  1. 250 g organic strawberry tails (with a bit of flesh remaining)
  2. 300 mL (1 1/4 cups) water
  3. 1 sprig of thyme or mint
  4. A pinch salt
  5. A pinch ground white pepper
  6. 200 g sugar
  7. 5 mL (1 tsp.) agar agar powder

Directions

  1. Wash strawberry tails and cover with water in a saucepan.
  2. Add a sprig of thyme or mint, salt and pepper and bring to a boil. Infuse for a few hours (minimum 2).
  3. Strain the mixture, add sugar and agar agar, then return to heat, leaving it to boil for 3 minutes.
  4. Pour jelly into Mason-type canning jars. Cool before serving.
