Spinach Salad with a Hint of Sesame

Spinach Salad with a Hint of Sesame

Ingredients

Salad

20 whole cherry tomatoes
1 red pepper
250 mL (1 cup) bean sprouts
1 tin (284 mL / 10 oz.) mandarin oranges, syrup drained and reserved
1.5 L (6 cups) baby spinach leaves
60 mL (1/4 cup) toasted sesame seeds

Dressing

60 mL (1/4 cup) vegetable oil
10 mL (2 teaspoons) sesame oil (optional)
60 mL (1/4 cup) mandarin orange syrup
15 mL (1 tablespoon) soy sauce
10 mL (2 teaspoons) grated fresh gingerroot

Directions

Combine tomatoes, pepper, bean sprouts, mandarin oranges and baby spinach leaves in a bowl. Reserve.
Whisk together vegetable oil, sesame oil, mandarin orange syrup, soy sauce and ginger in a small bowl.
Pour dressing over salad and toss to coat all ingredients. Sprinkle with toasted sesame seeds and serve.
