Ingredients

1 lb. (500 g) Italian sausage, mild or spicy, casing removed

1 small onion, finely chopped

½ cup (125 ml) dry white wine

1 cup (250 ml) chicken stock

Salt and pepper

1 lb. (500 g) pasta of your choice

½ cup (125 ml) grated parmesan
-
10 sundried tomatoes, chopped
-
4 cups (1 L) baby spinach
-
½ cup (125 ml) 15% cream (optional)

Freshly ground pepper

Directions

In a large frying pan on medium heat, heat oil and cook onions until translucent.

Add sausage meat, breaking it up in pan, and cook until meat is no longer pink.

Add white wine and let reduce before adding chicken stock. Reduce to a simmer.

Cook pasta according to package instructions.

When pasta is ready, add it to pan with sauce.

Add sundried tomatoes, spinach, and cream to taste.
-
Season with freshly cracked pepper and grated parmesan.
