Ingredients

125 mL (1/2 cup) Hot Seafood Sauce

180 mL (3/4 cup) white wine

15 mL (1 tablespoon) vegetable oil

5 mL (1 teaspoon) lemon zest, finely grated

Juice of 1 lemon

1 garlic clove, finely chopped

5 mL (1 teaspoon) dried oregano

10 mL (2 teaspoons) fresh ginger, grated

5 mL (1 teaspoon) curry powder

To taste, salt and pepper

4 trout fillets (750 g/1 1/2 lb in total)

Directions
- Combine the Our Compliments® Hot Seafood Sauce with the wine, oil, lemon zest and juice, garlic, oregano, ginger, curry, salt and pepper in a large shallow oven dish. Place the trout fillets in the marinade, turning them to ensure that they are thoroughly coated with the mixture. Cover and refrigerate for 30 minutes.
- Drain off the marinade and reserve it for later use. Preheat the barbecue to medium-high. Barbecue the fish uncovered for about 3 minutes on each side or until the flesh is opaque yet still moist inside.
- Pour the reserved marinade into a small saucepan and simmer over medium-high heat for 10 minutes, stirring occasionally.
- Serve the fish with the warm marinade as a sauce, along with rice and green beans.
