Ingredients

6 coloured sweet peppers, cut in small dice

2 yellow onions, chopped

4 cloves of garlic, finely chopped

45 mL (3 tbsp.) olive oil

2 mL (½ tsp.) cayenne pepper flakes

2 mL (½ tsp.) salt

Pepper to taste

250 mL (1 cup) sour cream, 0% M.F.

250 mL (1 cup) light cream cheese
-
250 mL (1 cup) mayonnaise
-
500 mL (2 cups) Sensations by Compliments Tex-Mex Shredded Cheese Blend

60 mL (¼ cup) chopped green onions

Directions
- Preheat oven to 200°C (400°F).
- Combine peppers, onions, garlic, oil, and seasoning in a large bowl. Line a baking sheet with parchment paper and spread pepper mixture on sheet. Bake in the oven for about 40 minutes, turning mixture over every 10 to 15 minutes, until peppers are roasted. Transfer mixture to a dish and refrigerate, uncovered, to cool.
- In a medium bowl, beat together sour cream, cream cheese, and mayonnaise with an electric mixer until smooth and creamy. Spread mixture into a 33 x 23 cm (13 x 9 in) rectangular glass dish, top evenly with pepper mixture, and garnish with shredded cheese and green onion. Enjoy with oven-baked tortilla chips or corn chips.
